Buttery Mashed Potato(less)es | 3 Ingredients, 25 Minutes

cauliflowermashedpotatoesI got really excited about this one because this looks and tastes exactly like mashed potatoes.  Seriously.  I experimented with this on a Friday night and ended up eating an entire head of cauliflower for dinner, and I don’t even really like cauliflower.  You can use this recipe as a side with any dinner wherein mashed potatoes would fit……and feel great knowing that you ate vegetables instead of starchy carbs.  Win win in my book.

This is really easy.  You need 3 ingredients and about 25 minutes.

  • 1 head cauliflower (or a bag of chopped cauliflower)
  • 2 TBS fat free cream cheese
  • 1 TBS grass fed butter or ghee
  • salt and pepper to taste (not really an ingredient)

Here’s what you do:

  • Steam the cauliflower until it gets soft
  • Dump the steamed cauliflower into a food processor or a blender (I use my blender)
  • Add the other ingredients
  • Blend until the consistency is like mashed potatoes-I usually stop the blender and push all of the chunks down a bit
  • Transfer your masterpiece back into a pot or saucepan on the stove to keep it warm.
  • Add salt and pepper to taste, or even some bacon crumbles
  • I should come clean here and confess that I use 2 TBS ghee

Double the recipe and you’ll have enough for 2-3 meals.  Now you can eat some serious vegetables at dinner while feeling as though you’re carbohydrating yourself all over the place.  You won’t wake up feeling like the Michelin tire woman, nor will you bring your fat burning to a screeching halt with nasty starchy stuff.  Your welcome.
