Gluten Free, Healthy Chocolate Chip Blondies with Sea Salt | YES, PLEASE.

Friends, prepare yourselves.  This may be the best recipe ever posted on the internet on MaverickMom.com, so go ahead and preheat your oven to 350 degrees.  These chocolate chip blondies with sea salt are so decadent and easy to make.  Bonus:  they are insanely guilt free.  In fact, I feel strongly that these could change your life.

Chocolate Chip Blondies Meme

 

You will need:

  • 1 can chickpeas (dump the liquid out)
  • 1/2 cup almond butter (peanut butter is a total fake, peanuts are legumes)
  • 2 TBS cup amber agave syrup (this adds a miniscule amount of sugar)
  • 1/4 cup stevia
  • 2 scoops vanilla protein powder if you want to go the extra mile (OR you can just use 2 TBS of vanilla extract)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 TBS chocolate chips or carob chips (or you can increase to 1/4 cup if you’re having a really wild afternoon)
  • sea salt to taste

Optional Fudgy Swirl  

This adds a really decadent “bang” to the whole thing.  It’s easy, so you may as well be a rockstar and make this part:

  • 4 oz dark chocolate (I use 85%, so get the darkest you can find to decrease sugar)
  • 1/3 cup coconut milk
  • 2 TBS stevia 

Melt these two ingredients in a pot and stir.  If it’s too thick, add a bit more coconut milk.  Back away from the mixture.  You can’t eat it now since you’ll need it in a few minutes.

It’s Go Time.  Let’s make these.

1.  Throw everything EXCEPT the last two ingredients (chocolate chips and sea salt) into a blender or food processor.

2. Blend, blend, blend.  Or process, process, process.

3. Pour into an 8 by 11ish pan.

*If you made the optional fudgy swirl, use a spoon or spatula to “swirl” this mixture back and forth through the batter.

4.  Sprinkle the chocolate chips on top.  Push a few down into the batter.

5.  Bake at 350 for about 20-25 minutes, or until edges are brown.  She’s done.

6.  Remove and sprinkle with course sea salt.

Yields anywhere from 1-12 servings depending on PMS status and number of hungry people at your house.

These puppies are packed with fiber and protein, but not sugar.  Each 1/12 contains about 2 grams of sugar, at worst.  Or maybe you were heavy handed with those chocolate chips, in which case they probably contain more.
