Paleo Chocolate Chip Brownies | Gluten Free and Packed With Protein

These Paleo chocolate chip brownies are delish, gluten free, low sugar, high protein, and easy to make!  They became a fast favorite at the Benton household this summer.  These are the perfect answer to any chocolate cravings, and they can substitute for protein bars, too.

All you need is the following ingredients and 2o minutes:

  • 1 cup of almond butter (or my new favorite, MaraNatha coconut almond butter)   
  • 2-3 scoops chocolate whey protein (hopefully from grass fed cows-I use Life Extension brand)
  • 1 egg or 1/4 cup egg whites
  • 1/4 cup almond milk, unsweetened
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 10 packets of stevia or 1/2 cup xylitol or Truvia
  • 1/4 cup to 1/2 cup chocolate chips or chocolate chunks (I like the Enjoy Life brand of chocolate chips, but any type will do!)

Now,

  1. Preheat your oven to 350.
  2. Mix all of this together.  I don’t have time to separate or “fold” ingredients, and you probably don’t either.  
  3. Pour this magic into an 8 by 8 pan or whatever you have about this size.  Obviously, spray it or line with parchment paper.
  4. Pop this puppy in the oven for 25 minutes and….

….Voila!  You have super delish, protein packed brownies.  Freeze them for a cold treat, or warm them up-they’re great either way!  Your welcome.
